Ingredients:
- 1 whole chicken
- 2 Potatoes ( I prefer 1 sweet and 1 regular )
- 2 White Onions
- Smoked Paprika OR Paprika with Liquid Smoke
- 1 jar of pimento stuffed green olives
- 1 Fresh Lemon
- 2 Tbsp. Extra virgin olive oil
Equipment:
- Cooling rack (or pan that has holes on the bottom; allowing for juices to seep through)
- Pan the same size as the rack
Directions:
- Dismantle the chicken as best as possible. In the end, you should have cut 2 breast slices, 2 thighs, and 2 wings. Other smaller pieces of the chicken can be salvaged, but won't be large enough to complete a serving. For instructions on chicken preparation - Click HERE
- In a small bowl, add enough paprika to completely season the chicken - (This will become your marinade).
- Next, if your paprika isn't pre-smoked, add 1/2 Tbsp of Liquid Smoke. Warning- This stuff is concentrated
- Once your paprika is "smoked", add enough EVOO to make the paprika into a thick paste. It should be a very thick consistency, you don't want this runny.
- Add the paprika to the chicken and thoroughly cover the chicken evenly as possible
- Let sit at room temperature for about 1 1/2 to marinade
- Set oven to 350 degrees
- Chop the green olives and set aside in a bowl- Should be small pieces
- Take a lemon and add a bit of seat into the mixture.
- Take the paprika chicken, carefully peel back the outer layer of skin, and stuff the green olive mixture beneath the skin. The skin will cause the flavors and the juices to join and remain in the chicken. Repeat for both breasts and thighs. The wings will be difficult, but I got it to work.
- For this portion, take out the cooling rack. Any other pan or rack with holes on the bottom allowing the fats and juices from the chicken to drop down will do.
- Cut up your onions into bite size portions. This can be achieved by cutting the onions in 1/8ths.
- Next, cut both potatoes in thin, circular, bite manageable sizes.
- Mix the onions and potatoes in a pan and place the rack of chicken on the top
- Bake for 40-45 minutes
- Enjoy the best and most flavorful chicken that you will ever have experienced!
